Three process variations are developed to synthesize dextran-bovine serum albumin (BSA) model conjugate through the Maillard reaction and a Schiff base-Amadori solid phase rearrangement mechanism at 90 °C. A novel kind of thermoresponsive polyelectrolyte complex-based nanogels (PEC-NGs) was elaborated by mixing hyaluronic acid (HA) functionalized with Jeffamine® M-2005 (M2005, a thermoresponsive amine-terminated polyether) and diethylaminoethyl dextran (DEAE-D) or poly-l-lysine (PLL) in water. The presence of M2005 grafts led to PEC-NGs with larger particle size, lower net surface charge and thermoresponsiveness, namely shrinkage with increasing hydrophobicity at higher temperature. The effect of fatty acid type bonded to chitosan on the emulsifying properties of chitosan-based particles was investigated. Capric acid, myristic acid, and stearic acid were attached to chitosan chains. Longer fatty acids in the structure of chitosan lead to the better and more uniform formation of chitosan nanogels.
